A S&O x Dageraad x Small Gods x Whistle Buoy Collaboration
Our friends from the island brought along some malt from Field 5 Farm, some Heritage Winter Barley which we used with British Maris Otter and a touch of Rye Malt as a base. Flaked barley is used to give a creamy mouthfeel and roasted barley and a hint of chocolate malt add the dry roastiness.
We took inspiration from the most famous brewer of a dry irish stout by taking a portion of the mash and souring it overnight before adding it back into the kettle. All this extra work for just a little “twang”, a little “je ne sais quoi” that adds depth and subtle complexity.
Along with a traditional English hop (EKG), we also added a little Sabro to the whirlpool for a whisper of coconut.

A: Pours a very thick dark brown/black with a thin tan head.
S: A mild nose of toffee/coffee/ chocolate.
T: Flavors as the nose with a dry bite to it.
F: Medium body with a smooth dry finish.
O: A nice Irish style stout i stocked up on a few.
