Inspiration for beer: We wanted to go big with a classic barleywine. No gimmicks, just a bold beer to sip slowly.
What sets this beer apart? What’s notable?: We wanted to keep this as simple as possible (while making the brewer’s day much longer) so instead of using caramel malts to achieve the final malt profile, we started with the maximum amount of Floor Malted Maris Otter malt* our mash tun could handle. The resulting wort was boiled for 6 hours to concentrate and amplify all the malt character while Maillard reactions added complexity and caramel flavours. European Noble hops are added for a balancing bitterness. Fermented with our house ale yeast.
