a really cool style to do like this, and a really cool beer, a hefeweizen done with local malt and fermented in an open oak vessel, which is a neat old world technique applied to a beer that doesnt usually get much tweaking other than the odd fruited edition. it makes it more of a rustic hefe, still very well refined, and not particularly woody or wild or anything, but it just has a lot more depth and nuance than a normal hefe, the esters of the yeast of banana and clove that usually dominate here are more mellow, and there is a light vinous almost french saison character in there as well, more complex and quite a bit more relaxed at the same time, almost delicate even. its still immediately identifiable as a hefe though, which is rad, the wheat is flavorful, earthy, and dry, and it puffs up the feel nicely. the yeast still has its trademark esters, but combined with the light oak tannins, the minerals that seem evident here, and a sort of slow and patient fermentation profile makes this a lot more unique to me, even if the flavors dont necessarily explode. it almost has a stone or slate element to it, but still is full of life. really cool process to introduce to this style, and the beer is dry and dynamic and easy drinking, i want like a half dozen of these. really cool twist on a style thats always way too standard! something a little different than i have known from these guys too! well done!
