i really love the original saison these guys make, and its not unhoppy on its own, its just more of a traditional hop profile, more grassy and drier and mellow with an earthy bitterness than the new school juicy fruity complexion, which i think this one takes a little far. i mean, this is still awesome, but the hops are such that the delicate nature of the beer is compromised, the yeast isnt so forward, and the citrusy and tropical hop notes take over a little bit. still delicious, highly aromatic on the hops, and still well carbonated, clean, and drinkable, but i liked the subtlety of the original, and that gentle hand vibe just isnt there with this one. i also tried this next to the tart saison and the dry hopped tart saison, and i had a similar criticism of those as well. sometimes when you strike gold with a recipe, its best to just leave it alone. the straight up baere saison is one of the best around, and it needs no tweaks in my opinion. this is fun to taste and a cool experiment, but the original is a fridge beer for me and needs nothing.
