i remember when i had their regular farmhouse for the first time thinking to myself that it would be better with a more rustic yeast profile, like they had the grain side down and it was dry and tasty and all, but a little too clean, and it really seemed to be begging for brett. i am glad they did this one, its really good, and overall, their brett stuff has been as good as anybody lately, and i really like the strain (or mix of strains) that they use. its super funky but without having a ton of fruit to it, it doesnt take over, rather lets the grain continue to shine. i think thats why it works so well in beers like their brett hoppy brown, but it also works really well here in this session type saison. light citrus from the hops juxtaposes mature musty funk from the brett, yet the beer is very cohesive, super flavorful, well carbonated and frankly just a really good saison, infinitely drinkable and very well refined. i always feel like if these guys were in some less developed beer city, they would be a treasure, but like they get list in the shuffle here a little bit, which is a real shame, because their beer is on point. this is exhibit a...
