an absolutely delicious beer from baere here, who has the kettle sours down pretty well at this point. this is done with fresh spruce tips, and even though its been in the cellar a little while now, everything here really pops, insanely fresh to me in nose and taste. a big fizzy head on the pour, but it settles to near flat almost instantly, and i am left with a mostly still glass of straw colored brew. it smells like lemon lime soda with a pine tree air freshener, no joke, thats what it smells like. some yogurty funky sourness from the lacto souring, some raw earthy wheat character, and some fresh lemon too, but its sprite and pine tree for me predominantly. the flavor is amazing, the spruce is so forward in here its crazy, giving it an almost gin-like botanical pop, still with some strong lemon and lime elements as well. its sour, but not overly so, and its not so clean as to be devoid of character on the ferment, which i love, its a little rustic in that way. simple on the grain side, wheaty but minimal, and with still an amazingly fresh spruce taste running all the way through it. better carbonation than it shows in the glass too, pepper in the feel, citrusy and dry on the swallow with a little herbal bitterness. really different stuff, summery to me, full of flavor, excellent use of the spruce. i thought this was fantastic!
