The Brewers of Whaler's appear to have a few Barrel Projects in their future, which I could not be more excited for. During a tour, I was informed that the first step they do for their Bourbon Stouts, is to focus on a rich, strong stout. Unlike most ales, this batch ferments for about a 75 days or so, to let the yeast do it's work. As far as i'm concerned that would be enough to satisfy me, but Whaler's likes going old skool, so they then add the batch to Oak Barrels and let it age. By the time we could get growlers of it, (and I guess bottles soon), it was absolutely delicious. Smooth and velvety with a delicate balance of Chocolate and Oak notes throughout. Not a beer you pound back quickly. Something a 16oz. bottle will be saved for a special occasion. I'm looking forward to them putting this in circulation.

This is probably the best beer I have tried from Whaler's Brewing Company.
The stout pours dark with standard head and minimal lacing. The smell mimics the nose, with a strong coffee presence and slight notes of chocolate. Low carbonation and a thin mouthfeel similar to a porter.
Overall, not an overly complex or intriguing beer but still the best from their arsenal.

Poured from a growler into a Whaler’s tulip glass.
The color is a dark black with little light if any coming through at the edges. There is little in the way of head and it just sits a brief moment before evaporating like was never there.
The smell of this beer is rich with a black licorice aroma that is sweet and enticing. Some touches of Bourbon whiskey come out on the second or third sniff. There is a tease of dark chocolate but it’s not alone, there are also some hints of fig along with some dried grapes and a touch of plum in the nose.
The taste is big bourbon flavor pushing this out a bit toward the back of the senses before some toffee flavor pulls you back from the edge. Almost bowled over it takes a second to take in the dark fruit flavor that slides into the gap left by a forceful bourbon flavor. There is an anis flavor here that lets in some brown sugar flavor mixed with a dark chocolate flavor. There is also a coffee flavor here that is strong and dark. Just at the outer edges there is a tease of bananas foster whispering just a bit.
The feel of this beer is big with a full body of heavy punches of bourbon that starts to feel like I’ve licked the inside of a Whiskey cask. Double digit ABV lets things go faster then expected and there is a heavy push this way and that way that really has a muscular hand on the controls and tries to take the wheel away from you. An adventure is to be had here.
