With aspirations of Belgian lambic in mind, the Tupiniquim brewery gathers a micorflora that relies heavily on brettanomyces wild yeast and the aged sourness that its fungus and bacteria blend brings.
As unappealing as that all sounds, the ale opens with a hazy peach hue and a spritzy, cotton-white froth to cap the beer with a militant pillow. Musty fruit pierces the nose with a robust fragrance of horse blanket, cork, burlap,cellar oak and a gentle waft of sea air. Then to taste, the powdered sweetness of cotton candy laces with sour fruit for a sweetheart and warhead medley on the front of the tongue.
Then the ale blooms on the middle palate with musty dried lemon, orange and lime. Sour white grape, crabapple and white vinegar adds pep and begin to enliven the taste. With sweetness dissolving effortlessly on the tongue, an earthy aura continues with a salty brine, balsa, cork and burlap flavor hinging on leather and oak.
Light bodied and bracingly acidic, the texture is bone-dry and powder-fine. Sour to taste and sharp in mouthfeel, the ale trails with champagne, sour grape and those pungent, earthy echoes in a quick aftertaste.
