a really peculiar ipa type here, modeled on the everything bagel and apparently brewed with onion, garlic, sesame seed, and poppy seed, never heard of such a thing and we had to try it when we were in. i dont think it smells or tastes all that onion or garlic forward, but its well hoppy and i do think there is some sort of natural synergy there, not like when hops are gross and taste like onions, but in an earthy, slightly spicy, hebral or vegetal sort of way. this is oddly delicious, even if it takes a minute to warm up to, and frankly, i think they did this about as well as anyone could have, the key is these weird ingredients being subtle. the seeds must add some body to this, it drinks like liquid bread, definitely as filling as a bagel, and a slow sipper as a result, i think the texture is spot on for the objective. faint onion in the nose but less in the taste, an almost salted complexion drying this out towards the end, a hint of the sesame, toasted, well selected grain profile to bring this to life too, and then hopped like an ipa with some snappy bitterness at the end and an almost dill note earlier on with everything else happening in here. strange as they come, but also curiously cohesive and almost addicting to drink. not sure why anyone would feel the need to do this to a beer, but its well done for what its worth...
