Pours amber red and quite hazy. It's a really nice shade against the light. A thin off-white head forms on top after a steady pour and wastes no time receding to the sides of the glass.
A fresh and lively green character pokes through its nutty and rich body. It's grassy and leafy and I assume the extra pep and zing to its green quality stems from the thyme. Pithy grapefruit is there as well, sitting side by side with toasted bread and caramel. Jammy esters come forward as it warms.
Just as lively and green in the taste. However, it's much more herbal and woody. The thyme really defines its center. It's clean and prickly and of near equal weight to its bready malty body that encapsulates it. Biscuity in the finish with a slightly unrefined hop bite.
50 IBU's hide themselves well in this incredibly rounded, medium bodied IPA. It finishes dry with a lingering, grassy bitterness. Its slightly below average level of CO2 works perfectly.
Thyme is the defining feature of this beer. Why I enjoy it is because it's used in the right way. It compliments its hop character and it's not overbearing. Its intensity is on par with the rest of the course. A perfect partner for a thyme infused dish.
