Created for our ‘Beer Fed Cattle Project’ at Hillstown Farm, we brewed an Imperial Stout which is strong and full bodied with exceptional depth, flavours enjoyed are coffee and chocolate and fruity hops and notes of roasted malt. Our stout is 7% and is best served at room temperature to fully appreciate the complex flavours.

I had this beer a few times and thought it was pretty decent. And then I had one that was from an infected batch. And that is not the first beer that I have had from this brewery that has been infected. Their quality control seems to be somewhat lacking if they are churning out infected beers to bars and supermarkets. Their customer service also has a lot to be desired as I have not heard a thing from them. I won't be buying their products again.

Bottle from the bodega enjoyed in the hotel in an attempt to lighten my luggage for the trip home.
Dark brown/black in color with a tan head that slowly recedes. Roasty but more earthy with light mineral notes. Caramel and hints of sugar with faint fruit. Decent beer.

500ml bottle from Tesco, Enniskillen (£2.59):
Quite a strange one from Hillstown here, the beer definitely opened lighter than expected for a beer that was 7% abv. & labelled as an imperial stout with the nose bordering on weak at points. Thankfully the taste was a little better with some nice cocoa & chocolate flavours alongside a caramel sweetness & subtle touches of alcohol to add a little strength & a slightly warming finish. The beer sadly wasn't as exciting or varied as I'd anticipated & perhaps it lost something when it changed from a 12% abv. offering to it's current 7% but it's probably not a beer that I'd pick up again.

Beautifully complex dry stout. Loads of toasted malt, dark chocolate, treacle and liquorice.
