This beer is a joint brew with our friends from Texas, the Jester King brewery, who visited us in August 2016. It is a farmhouse ale brewed using a technology borrowed from the brewing traditions of Chuvashia, when beer was brewed in every family.

All the ingredients in this beer are Russian - malt, Chuvash hops, water. And as a yeast starter we used the home culture of the Jester King brewery, brought from Texas. The wort was filtered through freshly picked stalks of wheat straw, the hops were boiled separately, and the wort was not boiled at all!

The beer fermented for over a year in wooden barrels from Russian red wine and we are happy to present you with the results of this slightly crazy experiment! We decided to release two blends (BLEND 1 and BLEND 2) from different barrels and a very limited batch of unblended beer (STRAIGHT) from one barrel, which we found the most interesting.

Our good friend, Belgian blender specialist from Hanssens brewery - Nicolas Vermeren - helped us with the blending!

Copenhagen 14/6 2020. 37,5 cl corked bottle from Kvickly, Allerød. Drawing of a serious looking Druid with big headpiece consisting of hop flowers.

Pours murky, unclear golden yellow with a small, bubbly white head. Disappears fairly fast leaving a thin rim of foam running along the side of the glass. No lacing.

Aroma is intense with a strong tart acidic odor and wild yeasty notes. Cider-like sweetness. Tart unripe berries - gooseberries and currants - in abundance. Funky yeasty touch. A bit of citrus and grape fruit.

Light carbonation. Thin, oily, lightly tingling texture.

Flavor is fairly intense with a medium strong sweetness and a stronger sourness. Aftertaste is tart and sour. Finish is vinous and dry.

Fine forest wine. Fruity, acidic and dry as Hell.
