With their flirtation with wood and souring agents, the Rooster brewers have proved adventurous right out the gate. This massive "accident" has accumulated a complex system of flavors to excite and seduce the palate.
The wild GodXilla kicks off tangy, tart and sour even to the nose as the rusty brown beer billows with foam. Its nose exudes the cider, vinegar, winey twang that is all-things cider, vinegar, toast, pepper and wood perfumes waft about the nose. Enduing mouth-watering stimulation, there's some serious tasting going on here.
From a savory balsamic cherry, blackberry, plumy blend early, the taste quickly develops to dry sherry, leather, rose, prune and fig through the middle. More of the earthen sourness takes hold late as a peppery taste couples with peat for a complex sour spiciness.
Its finish relaxes- as soon as the dry character wants to assault the palate with a battery of acidity, instead a soft candied concord grape flavor coaxes the finish with high oaken spice that hints toward scotch then backs off beautifully to extend with grape candy.

Introduced at the 2014 Fest of Ales in Lexington, this open fermented bourbon barrel aged sour porter was the hit of the day. Reminiscent of a Flanders or Oud Bruin, this had a puckering tartness but an easy smoothness. Sour, tart and sweet I caught literally Sweetarts candies, balsamic vinegar, dark fruit, black cherries and figgy malt. This is amazing especially because the brewery is only months old, at this point, and sours this good usually take years.
