Until today, I never knew invasive Japanese Knotweed existed, let alone that it was edible. It adds a tart citrusy punch, maybe a touch of green herbaceousnes, though it's hard to pinpoint. The base lambic was assertive with lemony acidity, a medium body, and steady effervescence. Very tasty and a great first impression of BBP's Dansaert lambic brewing project.
