We start by brewing a light-bodied honey ale with local honey from Ames Farm and Sorachi Ace hops. We finish off this complex brew by aging it in gin barrels from J. Carver Distillery, giving your taste buds a hint of juniper berries, coriander and select botanicals.

L: Pours gold with a slight haze that diminishes as it warms. Sports a 3” persistent cream colored foam cap that takes 4 minutes to diminish to 1/3 its original size. Produces a lattice work of lace. S: Definite gin barrel, juniper and spice aromas joined by light citrusy hops and traces of honey. Gin barrel aromas are medium high, hop aromas are medium, honey medium low, malt medium to medium low. T: Very interesting flavors with a honey background joined by a light malt sweetness. Complex layers of flavor weave in and out with gin, juniper, spice, spicy hops, citrus, and fruit. The honey and malt are medium, hop flavors medium to medium low, despite the 50 IBUs with all of the honey, malt and gin barrel, the bitterness comes across as medium to medium low. There is a light tartness on the finish. Ends with a bitter accent and a dash of oak tannin. F: Very creamy, medium body and carbonation. O: A unique, complex yet well balanced beer.

Really impressed with this one. Burnt orange color, thin lacing. Big nose of vanilla and honey with juniper in the background. Taste is full of honey and vanilla with some herbal and mild citrus notes coming at the end and into the finish. A little juniper lingers after. The vanilla is huge. Feel is a bit thin and finishes very dry. Really well done with a nice complexity, yet easy to drink.
