Liege ale made with 60% Mad Fritz floor malted spelt, an ancient wheat, locally grown Sonoran wheat, and some malted barley. One of the earlier beers to be brewed with hops in the 16 and 17th century. "In Liege there was 'good spelt-beer, very healthy and sought after, not only there, but sought after far and wide.'"

An airy khaki foam builds two fingers of head over a foggy dull brown body with a thin gradient of soft gold towards the bottom of the glass.
A unique showcase of toasted malt brings savory qualities that give a nuttiness that lean not quite into chestnut but with a little of that waxy chew. This is paired with tangy pear and a hint of phenolic spice. The old lady says the esters are more passion fruit-like to her, but it's too bitter for me to fully translate that.
It's kind of like if a bolder Belgian strong ale and a milder saison had a baby.
