A HOP HARVEST that we PACKED it into a BOTTLE! This year we brewed our first FRESH HOP beer in nearly 9 years. It hasn't been out of opportunity as we typically bring in close to 1000# of wet hops every year yet we dry them in our HOP KLIN or OAST HOUSE. This allows us to use the hops dried and stored for the entire year and there after. Fresh Cascade hops from AV HOPs were being cleaned from the bines and we hauling in nearly 100 pounds while our team was brewing this beautiful wort made with 68% malted Full Pint, 12% malted oats and 20% malted white wheat. These other malts add a softness or rounded edges to the bitterness in this IPA. We fermented it with our Belgian yeast strain so its got some subtle yeast spice tones and good dryness. 72 IBUs and 7.3% ABV.

Gently hazy but bright yellow with a soft white head.
I didn't expect this to be so herbal, verdant, and bright in flavor either, but it's almost dank and gassy, yet pulls back with a bone dry finish. It's got an airy froth before that, though, bringing touch of their underlying culture, but otherwise eschewing saison at first.
Quite enjoyable, as I dig in, I do start getting Jester King vibes.
