Poured crystal clear with virtually no foam. The chardonnay barrel was very, very strong. In the smell it was pleasant, giving the yeast a nice dry white grape and olive aromas to bond with. The taste was too much chardonnay for me. Highly drinkable and sneaky in abv. If you like chardonnay wine, this beer is for you!

Also had this one during the taproom kickoff weekend/Meerts release. Hazy gold coming out the tap and into the glass. Small 1/4" white head that goes by the wayside. Musty grape and oak foeder type of funkiness at the funk factory going on right now. Somewhere between that Burton Snatch and Belgian funk via heartland of Wisconsin spontaneous flora.

Taste is a nice hybrid kind of wine/sour beer that I am accustomed to only coming across when drinking some of the Bruery mashups if you will. I can dig it. Light wheat and barley base, locally sourced grapes I believe (or at least the winery this is collaborated with). A little bit of mineral like bitterness and citrus like acidity to it. I liked it, but it was far from my favorite thing that day. Also hid the alcohol decently.

Cloudy pale gold with no head--it's almost still looking.

Smell is savory toasted sesame seeds, drainage ditch funk, peanut and lemon rind. In a very similar manner as their FFG "IPA," Cervino gets really god damn insanely funky after warming, with sweaty socks and soggy Cheerios.

On the palate a strange spicy funk of grape must introduces itself with sharp white champagne oak, funky soft white cheese, walnut, and something mildly bitter, like green onion.

Sharp but round, there is not much carbonation, but some, with a little charred acidic oak mixed in, and a semi-dry finish.

On draft at the brewery. Pours a slightly hazed straw yellow color with fizzy white head that dissipates quickly. This smells a lot more like a traditional Belgian lambic; funk, wheat, light citrus, and some tartness on the nose; follows onto the palate. Light bodied. Finishes with a nice funk and a very light tartness. Very light and crisp.

On tap at Funk Factory. Served in a mini-tumbler glass. Pours a hazy golden yellow body, one finger white head, good retention, not much lacing. Smell is distinctly funky, in a way this reminds me of my stroll through Yellowstone by Old Faithful. The sulfur and minerals are strong in this one, with a bit of white vinous character, oak and light lemon. Flavour brings a bit less of the sulfur, and the base wild ale comes out a bit more with a light lemon and straw, mild acetic acidity, oak and touch of earth, although it is all a bit overshadowed by the dry white vinous character. Mouthfeel is medium bodied, good carbonation, appropriate depth with a bit more sulfur on the finish. A strange and interesting blend that apparently bought out the sulfur and minerals to bear, and well, it is an interesting experiment in that regard. I wonder if the sulfur comes out more from the wild ale blend, which I think is spontaneously fermented, that reacted to the addition of the chardonnay juice.
