Jove, the Roman king of gods, is where Sangiovese name is derived. An appropriate name for a blend of spontaneous barrels averaging 2 years which refermented Sangiovese grapes. 2lbs/gallon were added and punched down twice daily during refermentation.

375ml bottle on draft at Funk Factory. Served in a branded stemmed glass. Pours a medium darker purple-reddish body; somewhat has the consistency of puree. Interesting. One finger dark pink head, not much retention, bit of lacing. Smell is that distinct deep woody house funk, which brings along a fair bit of grape juice; more of the sweetness and less of the tannic character that Cervino Sangiovese had. Tasting a fair bit of lactic acidity, wet oak, grape skin, touch of dark fruit like raisin. Moderately acidic, but not super acidic like Moerbei Punchdown. Mouthfeel is medium bodied, slightly pulpy feel, good carbonation, easy to drink the 375ml bottle on my own lonesome. Very nice grape wild, a step up from the Cervinos that have come out of this blendery.
