Collaboration with Forager Brewery

This Forager Brewing collaboration began life as the spontaneous beer used in Glory in the Morning, a three barrel blend of different vintages of Méthode Traditionnelle (MT) beer. Prior to packaging Glory in the Morning, roughly 50 gallons was split off and transferred to a punchdown barrel where it was refermented on 2 lbs/gal of wild blackberries and a small portion of wild elderberries, both harvested in the woods of Minnesota by our friends from Forager Brewing Co. The barrel was punched down twice daily to re-submerge the fruit cap that floats to the top due to the CO2 produced during the refermentation, with the goal of increasing fruit contact with the beer. The result is a three-year spontaneous blend bursting with fruity, tannic, and subtly spicy flavors from Forager’s fruit contribution.

750ml bottle at share. Another sour, more Brett. Pale Golden pour, Light and Airy head. Aroma and taste are fruity, blackberries, sweet with some funky yeast notes.

Thin looking ruby body with white ring. Big berries, particularly blackberry, leads the nose with oak, flowers, a touch of lacto, big barnyard and barrel funk. Taste follows but the finish is remarkable in how dry and floral it is with accents of hay and lemon. Elderberry stronger in the taste as it almost matches the blackberry. Feel starts wetter than finishes drier, has mild acidity and funk throughout the sip and a lingering dry tartness. Medium bodied, has some funk nuance and movement as it warms. This is one that seems better than the sum of its parts

On-site bottle at Funk Factory. Served in a branded stemmed glass. Medium darker reddish pink body, one finger white head, fair retention, no lacing. Smell is bright blackberry, fairly tart flesh with a fairly moderate acetic acidity, suggesting that this will be a fairly dry beer. Light lemon, not all that much leather. The particular flavour of the blackberry reminds me of Framzwartje- it has this exceptionally dry, slightly vinous flavour to it. That helps dry out the beer some, but the fruit sweetness (perhaps the elderberries) lingers throughout and keeps it from getting too dry. Fairly good balance. Mouthfeel is medium bodied, good carbonation, balanced between fruit and acetic flavours on the finish.
