For Abrikoos en Hop, we selected a single two-year old spontaneous MT barrel and fermented it on apricots for eight weeks before a light dry-hopping with Nelson Sauvin hops. It bursts with notes of stone fruit, tropical aromas, and herbaceous white wine flavors. This beer was inspired by one of the entries in our Staff Draft competition during Madison Craft Beer Week.

750ml cork and cage bottle. Stemmed glass. Slightly cloudy golden orange body, one finger white head, good retention, not much in the way of lacing. Smell is tart stonefruit flesh and skin, light leather, medium lemony zest, moderate acetic acidity, light oak. A bit of grassy nelson hops as well, not unlike Casey dry-hopped saisons. As a whole, it's fairly apricot forward and dry on the palate, with a nice moderate acetic bite to it. It's different than Fou Foune, but is certainly unique to Funk Factory's house profile where there is a sharper, crisper acetic bite along with a drier, apricot flavour. Mouthfeel is medium bodied, good carbonation, refreshing with a nice grassy bite accompanied by a bit of stonefruit sweetness on the backend. One of Funk Factory's finest beers, it's a shame that this was so limited.
