Apple Pie is a single barrel of 18 month-old spontaneous beer that we aged further in a bourbon barrel generously given to us by our friends at Pips Meadery. Before making its way to us, the Buffalo Trace store pick barrel held a cinnamon version of Pips’ amazing cranberry mead, La Hire. After six months of additional aging, the beer picked up a deep color and incredible aromatics reminiscent of apple orchards, cinnamon sugar donuts, oak vanillin, and a fruity Brettanomyces funk. To subtly complement these characteristics, we refermented the beer on a small amount of fresh apple cider before packaging and bottle conditioning.

I just had to try this one with my affinity for lambic and all things autumn! Poured cloudy orange from the bottle, with a finger of white foam and spotted lacing. Aromas have incredibly married the apple, cinnamon, brown sugar, molasses, hints of caramel, trace amounts of cranberry with the barnyard funk, oak, sour esters, and yeast, truly impressed. Taste is the exact same, to those who would say this is gimmicky, I point to the depth of the funk and cultivated balance this beer strikes, I instead argue it pioneers something thoughtful and (gasp!) fun. Feel has swirling cinnamon, funk, and yeast dancing atop the oak, sour and yeast textures, could be a touch more dynamic with the funk here but I am nitpicking. Wonderful new world take on the style
