This iteration of our Foeder Saison is fermented with a mix of saison yeast strains, cultured microbes, and the spontaneous yeast and bacteria that reside in the walls of our 80 hl French oak foeders. Thoughtfully brewed and blended to balance a crisp, dry, drinking experience with a fluffy head and mouthfeel, it was aged on 2 lbs/gal of peaches after 9 months of fermentation. This fruiting rate allows the stone fruit to express itself by complementing the blend without dominating the overall composition.

Murky amber pour with an accompanying white ring. Lightly tart sour, bright peach, good funk and hay make up the nose. Taste focuses more on the juicy peach with sour oak combination, funk, slight brett, hay, and flowers, that all together make a deeper sum than their parts. Feel is springy, tart, bright, yet has decent gravity to the body given this set up. Oak is constant but not overbearing, artful. Like the taste, the beer is better than its aspects
