Natural Balance is the eighth installment in our Barn Quilt series, and is a blend consisting of only two-year-old spontaneous beer.

Clear golden amber with a tall off-white foam head that fizzles audibly but dies only halfway to a thickly lumpy head leaving spongy lace.
The nose reminds me of Drie Fonteinen, but slightly more fruity, like pickled apricot with classic toasted seed qualities and even a funky, barny oak.
The palate delivers a moderate acidity that also exudes stonefruits within a slick body that’s less carbonated than it looks. At the same time it's still prickly and peppery, and quite complex, owing to ribbons of white and charred oaks that seem to develop.
As I discovered on our recent trip to Wisconsin, Funk Factory’s spontaneous fermentation game has continued to progress impressively since I last stockpiled them. I had this on Armand's birthday, and I felt it to be a worthy tribute despite not being a proper 3F.
