Collaboration with City Winery of Chicago. Fermented with Jovaru yeast in used City Winery barrels before aging on City Winery Cabernet Sauvignon grapes.

Beer pours a semi cloudy, deep golden amber color with a dusty off white 1/2" foam cap, mild retention. Aromoas of funky Brett, oak, yeast, spice, grape musk, light white pepper, pale malts. Taste is bold, vinous mix of overly ripe and mildly tart Cabernet Sauvignon grapes, spicy peppery yeast, oak, grassy hops, pale grains, slight sour dough bread notes. Mouthfeel was crisp, medium to high carbonation with a semi slick and dry finish. Lingering spicy yeast and funky barnyard qualities grip the tongue. The high ABV isn't noted on the nose or tongue but only as a slight warming on the finish. The beer is listed as a 'sour' on the City Winery menu but this isn't a sour beer, it has many wine like characters and bold spicy barnyard qualities as to call this a saison or a brut champagne hybrid. The overall flavor is unique, wine like, dry and oaky, bold spicy yeast and with an assertive carbonation that makes this a perfect beer to pair with any of the dishes offered at City Winery. This is only available on draft at their restaurant / bar in Chicago.
