Tasted in a snifter from draft at Whole Foods on July 23, 2019. Brewed in collaboration with Compass Bar. Classic saison gets the Hippo treatment with a solid dose of Italian plum partway through the fermentation process. Has an essence of plum without any cloying sweetness.
