Even after a full pour, the body is a moderately clear, striking Jurassic Park amber with a long lasting but fizzy head that settles imperceptibly to a thin blanket of fizzy bubbles.
Smell is sharp but charred oak with white wine and red grape, saltine cracker, a little nuttiness and pear skin. Pear comes out more in the nose as it warms, while it disappears on the palate simultaneously.
Taste is powerfully sour, nearing acetic but not quite, with a puckeringly tart lemon, grapefruit, white wine oak, and unique earthy pear that seems to take a back seat to harsher, more acidic sourness the longer and longer you let this age. This was one of the old ladies first sours that she truly and thoroughly enjoyed, so we've cracked a few bottles open over the years--this one on 7/28/17 being our last. It's definitely an enjoyable brew, but we have had many standout sours since then.
Feel is crisp, tingly and tangy, with a semi-dry to semi-wet finish.

Was impressed with my first DESTIHL sour. Hopefully this one will be even better. 500 ml bottle into a champagne flute.
A - Looks like champagne, although maybe a bit of a deeper orange. Tons of bubbles streaming up, reinforcing a fairly pillowy bright white head. Nice.
N - Tons of funk and tartness and maybe a subtle pear, but not much of it. The tartness is getting me excited though.
T - Oh yes, this one is a smack of sourness right up front, and it continues all the way to the very back end. And it's at the back end that I get sweet and sour pear juice. The front and middle is 100% sour funk. An excellent sour.
M - So much carbonation without being a gusher. My entire mouth is tingly really like champagne. i get that buttery yogurt-like quality to it as well. Nicely done.
O - Yes, another impressive sour from DESTIHL. Not sure I have any more of their sours, which is a shame. This was really yummy.

LOOK: Golden ale with a pale perfect clarity. White head.
SMELL: Sour smelling, barrel, nondescript fruit, lemon lime more than anything.
TASTE: Sour and some barrel notes, a little pear in the aftertaste.
FEEL: Nice strong carbonation, effervescent, tart and drinks well.
OVERALL: Delicious sour ale, heavier on the sour than the pear. Great barrel. Nice pear.

A: Clear light amber with a very thin white head that dissipates quickly and a very light stream of suds.
S: Light aroma of sour yeast and fruit.
T: Medium pear flavor is present with moderate wild yeast.
M: Thin with seltzer-like carbonation that pleasantly complements the taste of pear.
