Like a Matryoshka or 'nesting' doll, the secret of Dosvidanya Imperial Stout lies locked deep within her dark, mysterious and elaborate wooden layers. We said Dosvidanya, or ʻfarewellʼ, as we began aging this beer in Heaven Hill bourbon barrels for several months before transferring it to bourbon barrels from Black Band Distillery in Peoria, IL to age further, finally revealing its rich flavors like dark chocolate, toffee, black cherries and coffee along with robust & roasty maltiness that finishes dry. Cellared a year. Midnight black body, brown ring. Smell and taste feature the same stars: big roasted malt, bourbon, big wood, char, earth, mild leather and rounded out by big black strap molasses. Taste has a black cherry and licorice whisper added, smell a coffee note. Full robust and chewy warm body, pleasantly dry and shows off the barrel character pretty well
