When brewing an Irish Dry Stout many try to emulate the creamy white head of that insipid but most iconic Irish brew. Strathroy, however, did not and Smokin' Cannon Stout has a for more sudsy topping, one that fails to cover the whole of the surface. And its body is not quite black; clear when held up to the light, pecan-toned highlights offer themselves up without much fight.

When it comes to stouts, I expect more aromatically than this. You shouldn't have to work to figure out what's in the glass - it should be obvious. But blindfolded I honestly wouldn't know what to guess this. Maybe Brown Ale? There's not enough character to convince me of a stout.

There's a little bit more of the "rich mocha and chocolate flavours" the brewery promised on the palate. (Emphasis on "little".) But something else also arises: a very off-putting astringency, a burnt smoky element that makes you feel as though you've got a mouth full of ashes. Each sip finishes on this unpleasant note, which erases most of the creamy cocoa and coffee flavours that preceded it.

Another hallmark characteristic of a stout is that it should be substantial. That's not to say "filling" per se, but it does mean satiating. If not in the belly than certainly on the palate, it should feel fuller, heartier, and to some degree nourishing. Despite the extra percent alcohol (dry stouts tend to hover around the 4% mark, not 5%) this is neither more substantial nor satisfying.

It brings me no joy to be so critical of a new brewery. The fact of the matter, however, is that I've spent a good deal of money to get these beers and took the time to sample several bottles so as to develop a proper opinion of them. Hopefully Strathroy takes these comments in stride and improves their recipes. I haven't given up on them yet. Better things are to come, I'm sure.
