Notes via stream of consciousness: A very cloudy amber-orange colored body rests gently beneath a finger's width of white foam. There's some visible particulate in suspension, and not much in the way of rising bubbles. In the nose I'm getting apricot, passionfruit, berries, soft pine, and earthiness. The flavor reveals a moderate to median tartness and enhances the apricot character. There are more berries here, including both dark and red berries, and some mango and orange. The pine is subdued and mild. The malt is softly sweet and lightly bready. It's not bitter but the acidity is enough to bring it to a dry finish with some floral character, dried grass, and a lightly spicy earthiness swirling. It's interesting and highly quaffable despite the acidity. In the mouth it's medium bodied and gently crisp with a low level bitterness. The head held up fairly well initially, although the lacing was limited. Still, for the head to hold up at all in a sour beer is a good thing. I think they've finally hit on something with this one. If I didn't know better I'd probably think that there was apricot puree added to it. It's really nicely balanced between sweet and tart, and well rounded with all of the flavor components at basically the same level, or higher/lower as appropriate. I could go for more of this.

Added by Act25. 1st review. Dreamy Saison/Wild IPA combination, inspired by the risks associated with early Aviators, which were addressed by better planes being built in NJ.
a) Creamy, head that lasts with suitably rising fine bubbles ringing steadily in the tulip.
s) Apricot, yeast, saison citrus.
t) Better than Pure Yay! the latest Wild IPA from Carton (NJ), more apricot and orchard fruit, with cider like notes.
f) Tingly, yet creamy, refreshing, drinks like a Saison.
o) The sum is greater than the parts, - wonderful tribute to Aviators everywhere.
