Quantum Brewing

Nearly totally clear bronze amber, with a good-sized but fleeting white head. Smells of a lovely bouquet of hops, lychee and potpourri and hibiscus and passion fruit and lime zest. Tastes maltier than expected (though this bottle isn't that fresh), with a pleasantly solid structure carrying flavors of Campari, brown toast, pecans, lime, menthol (?!), and lilies. The softly sweet malt flavor is abruptly cut off in the finish by a bracing, juicyg, mouthwatering bitterness. A very tasty and interesting IPA. Possible food pairings: very hard cheese, spicy pizza, ham or salt beef with hot mustard, mozzarella sticks, tomato-based soups/stews/sauces.
