Many brewers use imported nuts to flavor their stouts. we thought, why not use something swedish and locally-grown to give the beer these notes. and we thought, why not use parsnip?
When fried it develops a really nice nuttiness, which is perfect for a stout. to add something extra we used some fermented shiso leaves giving the brew some of that sweet marzipan flavor.
This all adds up to a smooth complex and flavorful black beer

Copenhagen 11/1 2022. 33 cl bottle from Systembolaget, Emporia, Hyllie. Drawing of a strange figure resembling a parsnip cooking an obscure fluid on the label.
Pours opaque dark brown with a smaller beige head. Stable. Settles as thin but consistent layer of foam just covering the surface of the beer. Moderate lacing.
Aroma is medium intense with a dark sweet and roasted scent. Dark roasted malts, hints of brown sugar and toffee. Potent dark alcohol lurking in the background.
Medium strong carbonation. Medium thick, oily, soft, smooth, lightly tingling texture.
Flavor is fairly intense with a medium strong sweetness followed by a more moderate bitterness. Aftertaste is pleasantly sweet with a notable bitter undertone. Lingering. Finish is semi-dry.
Not much sign of the Parsnip. My lucky day.
