The final obstacle in constructing the Erie Canal was leveling a 7 mile section of the canal 40 feet deep - by hand - between Lockport and Lake Erie. Our Deep Cut Double IPA is our most ambitious beer to date. It's layered with citrus, tropical punch, and wild berry hop flavor, with moderate bitterness and a dry finish. This beer won a silver medal in the Strong IPA category at the TAP NY craft beer festival in 2016.

Served on tap in a 13 oz (384 ml) goblet at the Big Ditch Brewing in Buffalo, NY.
A: Pours an opaque orange amber color with a one finger, off-white head, rim and cap retention, but decent lacing.
S: Aromas of citrus (orange mostly), honey, and caramel.
T: Semisweet to sweet. Flavor profile largely follows the nose. Balanced, but solid bitterness.
M: Medium bodied with moderate carbonation. Booziness evident
O: A strong, well made AIIPA.

Having a 5 oz. sample pour of this in a flight of beers I am enjoying at a very nice craft beer bar called Beer Snobs in downtown Jamestown, NY. This beer draws a mainly clear, medium golden/copper color with a a small white head that settles eventually to a thick white ring lining the inside of the glass along with a nice big cluster swirl of surface foam and some nice lacing. Aromas of some biscuity malts followed by some piney, floral, earthy hops. The taste also has biscuity malts followed by some piney, floral, earthy hops along with hints of melon and cantaloupe and a bit of mango too. The hop flavors are a bit more laid back here and aren’t clonking my palate and tastebuds over the head with pungent, astringent bitterness. Really liking the fruit aspects of the hop profile a lot here. Has a slightly crisp, mostly smooth, medium to full bodied mouthfeel with moderate carbonation. Has a somewhat dry finish, and those fruit flavors really linger on my palate nicely.

Had on-tap at Big Ditch Brewing in Buffalo, NY

Appearance - Taster, hazy and deep orange color with an island of suds in the center and thin ring around outside edge. Small spots make up the sparse lacing.

Smell - Dirtied orange, mango, guava and a hint of pineapple.

Taste - Follows the nose. Orange and earth upfront before some mild mango and guava kicks in. Faint pineapple acidity joins the brigade in the finish.

Mouthfeel - Full-bodied with fair carbonation. Drinks fairly before dry, slightly chalky finish.

Overall - This is a sipper, for sure. Heavy and deep. I'm not sure if I really like this beer or slightly dislike it. That changes from sip to sip, lol.

Very tastey, juicy hop flavor with no hop bite. However, a strong rind flavor that stays on the to guess for awhile which is not my favorite. but the flavor of the beer itself is very pleasant.

Got a 5 oz glass at the brewery in downtown Buffalo in a snowing day. A most charming place.

An excellent beer, full of tropical fruitiness and citrusy smell and taste.

16 oz can sent over from Beerchaeology. Poured into Ploughshare wide-mouthed glass. Can date 6/28/18.

Pours a hazy but not juicy golden honey color with a thin but stable head of 1/2 finger.

Aromas of slight apricot, with melon, pine, lemongrass, grapefruit peel, herbal, slight cracker, honey biscuit.

This one faded super fast. I'm getting the caramelization of the hops first and foremost, lots of scotch tape, with some generic pine, grapefruit, herbal. Slight oxidation. I feel bad because I was really looking forward to the flavor descriptors on the can. Undrinkable at this point.

Feel is carbonated with a nice creaminess.

Overall, it's wasted, and I regret waiting so long but with so many IPA's to choose from I had to pick to drink what I was interested in first. This one went to pot really, really quick. I don't regret my overall score, IPA's should last longer than 45 days and not fall off completely at 59 days. Drink within 30 days for best results.

Beautiful nose of citrus and spices. The color is a hazy light brown. It poured into a tulip glass with a one finger head. The taste is very hoppy without any bitterness. I think this is really great beer from Big Ditch. More please!

Batch is 4/17/18--Pours slightly hazy, orange-brown in color with half inch head. Taste is orange, pale malt, and biscuit. Slightly bitter, medium bodied and carbonation. Makes for a really good DIPA. Glad I got a four pack.
