Bonne Nuit is a special collaboration with our friend and beer-itual advisor, Jerome Seipp. It is brewed in the tradition of Belgian strong ales, but hopped in the American tradition with Centennial, Cascade, and Columbus. This version was then aged in Kentucky Bourbon Barrels.

2020 vintage.

This one pours a rusted golden orange color, with a small head, and a bit of lacing.

This smells like stone fruit, oak, bourbon, orange-y hop character, pear, tobacco, clove, and flowers.

This is super unique and I'm here for it. There's a good amount of barrel, with spicy oak, some light vanilla, maybe even coconut, with some leather and tobacco from the bourbon. The Belgian ale gives off pear skin, peach skin, clove, and floral tastes.

This has a great mouthfeel, not too big and not too thin, somewhere in the middle, with a soft and creamy carbonation level.

You don't see stuff like this very often, and I'm not surprised at all that Holy Mountain nailed it.

Pale, orange tinged body.

Lots of grape on the nose. Bourbon mash, pear, prune, apple, raisin. Caramel, pine, citrus.

Interesting balance and interplay between hops, malt, yeast, and barrel. Barrel comes on quite strong in the second half, growing through the finish, and imparting notes of mash, oak, and coconut. Caramel, grapes, citrus, pear.

Pours a rich caramel amber that almost looks like thin honey in the glass. Nice off white head that settles in to a soft cap with decent lacing initially that carries through the drink.

Nose starts off with an earthy pulpy wood character that I feel like I get from HM sometimes. Sitting over that is some vanilla and caramel with biscuity/crackery malts and faint flashes of orange marmalade or citrus gummis. I take that to be the hops.

Very first blush is a big load of sweet vanilla from the barrel, and honestly it's more sweet than I want, personally. That's fairly quickly subsumed by the yeast and the hops as it turns to a layered complex blend of its various components as listed on the bottle: the sweet barrel, some sweet estery belgian yeasts, fruity hops, and a warm alcohol finish that then rededicates to the Belgian character and subtle undercurrent of dull hop bitterness.

I tried the bourbon barrel aged version of this beer at the pub. The bourbon notes are VERY strong, both in the scent and the taste. Thick mouthfeel, definitely a sipper of a beer. Spectacular take on this style, and one of the best beers I've had from Holy Mountain so far.
