IPA we brewed to celebrate the 30th Anniversary of the one and only Latona Pub. Test of Time was brewed with Mosaic and Simcoe cryo-pellets as well as whole leaf Citra hops.

Pours two fingers of dense white head into my Willi. Retention is very nice and after a few minutes there is still nearly a finger of head left; a small piece lasts most of the way down the glass. Lacing is very thick. Body is a slightly cloudy yellow with a moderate amount of bubbles coming up, pretty translucent for what I presume is a hazy. Still, a lovely looking beer.
Nose is pretty citrus forward - citrus rind, zesty, mandarin oranges. Faint mango, papaya, gooseberries, sweet fruit, and even some spice come out over time. Once it gets a chance to develop, this is pretty nice.
Flavor has big dank notes up front, leads into a big spiciness, some citrus rind in the finish. Strawberries hit long after the finish - nice. All in all it's a nice IPA with a lot of depth.
Carbonation is medium. Somewhat light bodied. Bitterness is moderate, the citrus in the finish is bitter until the palate adapts. No real sweetness other than the fruity hops. Mouthfeel is good, the spice gives nice character.
Drinkability is solid.
This beer has a lot going on, almost too much at times with how much it changes. At the end of the day it's an enjoyable IPA with a good amount of hoppy spice.
