if you told be when i walked into holy mountain than a belgian single billed as a patersbier would be my favorite of all their offerings, i would have called you crazy. had to be a brett saison right? well, turns out this was the most fantastic beer of all of them in here, one of the more complex beers at this abv i have ever known, and one i wish i could get regularly here in denver, it would be my fridge staple for sure. usually these american made belgians, especially at low abv, are these highly estery too warm and generic yeasty things, really overdone and unappealing, the cheap tasting belgians if you will, but this stands in stark contrast to such a thing. the yeast is spicy but soft, herbaceous and fresh, under control, and quite distinctive compared to what i am used to in this style. the malt is flavorful yet dry, with very mild white wine and honey aspects to it, less cerealy than many, so clean, and there is a nice old world hoppy finish, bitter enough, amazing with the yeast, and delicately fruity. there is a cool minerality to this, like light brine or something, that also endears it to me right away, and its so carbonated, alive, and fresh, it drinks easy as anything, and is an ideal session beer. faint notes of coriander and natural metal in here, which is oddly a good thing, and then this yeast. this is a major winner, a favorite in the style after just one glass! woefully underrated.
