bottled april 2023, and absolutely epic, one of my favorite beers from a very impressive night of beer drinking, i love beer and wine hybrids like this, and this one is next level, among the best ive ever had from holy mountain, which is saying a whole lot, truly special liquid, drinking perfect right now. the color is stunning, jewel tone ruby reddish purple, amazing, some haze towards the bottom, good carbonation but a short white head is all that comes. the aroma is insane, awesome brett profile, mature, super funky and musty and drying, but the fruit is obvious too, not as malbec per se, but as earthy deep red wine grapes, hints of black raspberry and black currant here too, moderate sourness makes my mouth water, lemony and lactic, woody, wheaty on the grain side, but real high fruit intensity to this, and an almost lambic level wild side. the flavor is amazing, juicy grapes and wine together, tannic and tart, volcanic even to me, with a sort of dark soil element to it, candied level intensity, but also some bitterness, from the skins or something, iron, starchy grain underneath is pretty subtle, acidity pretty decently high, especially as it sits a bit, but amazing fruit character, halfway to wine it seems, red raspberry, huckleberry, and the ferment is insane, oak and bretty funk together, drier than seems possible earlier, one part saison to me with some peppery spice and one part lambic with all this medicinal funkiness, beautiful. sneaky strong alcohol, brilliant fruit purity and quality, love the high dosage, and the bubbles this has are nice. gone almost quicker than i want it to be because it tastes so good, light in body for its strength, but the grain is not invisible at all, to its credit. wonderful beer, the ferment and fruit together are downright special, and im dying to try some other grape varietals they do in this sacrament series (awesome name). elite beer in a style i am obsessed with right now!
