From a 750 ml bottle that's been hanging out patiently in my fridge since I hauled it back from the PNW road trip last summer, into a GI tulip. Yum, right on target. Shiny deep gold, slightly dense, decent 1 finger head and a little retention. Nose is just a little woody (I wouldn’t guess oak, based only on the nose but I get it mid-way through the tasting), the Brett isn’t anything too funky or horsey (it is in the pleasant earthy/fruity/musty grape quadrant of possibility), but the balance is perfect, with some solid but light bready malt. Taste brings a little more tropical fruit, along with everything promised by the nose. Mouthful is great...full but light.: carb is perfect, with a lively zip, but kind of wet on the finish, which somehow works just fine. I wish i had better access to more Brett ipas like this. Very well made, very tasty and fun.

a brett fermented ipa here, a blend of oak and stainless, reasonably priced for what it is, and dont let the minimalist packing fool you, this is a complex beer, something special, in a style i am really digging right now. i like this being a blend, i think the brett pops a little more without a heavy wood profile, but i also think some wood does add more of a rustic farmhouse vibe to this, a certain maturity set against the freshness of the hops, and some cool depth where the grain seems light and minimal, so i appreciate the two threads coming together like this. very light looking from the bottle, only slightly hazy for most of it, pale hued and extremely bubbly, several inches of fizzing and popping white foam tops the brew, even when i pour it very gently. the nose of funky well developed brett fills the room, even over an awesome table of food, its the strongest scent in the place, the hops right there with the funk, melon and pineapple and lemon, along with musty basement and wet dog, some white wine character too, real sexy, fresh and mature at the same time too. the taste is super fast, like it hits all at once and then is gone, impossibly dry, even with juicy hops, its crazy, the brett adds some vinous fruitiness that marries in well with whatever these hops are, and there is a little bit of bitterness too which fires up at the end, rushing carbonation keeps it light and refreshing on each sip, just an ever so slight tartness but no real bacterial sourness here, its all brett. i love brett in this context, and i like this strain or mix of strains, its old worldy and its out front with the dry hopping, really bold in the flavor mix. very well refined, i think the stainless ferment part of this blend keeps it clean and bright, just a very thoughtful and well executed beer. gorgeous with grilled fish, an easy large bottle to consume as a solo mission, and another tasty offering from holy mountain. this is the kind of thing i think they do best!
