another cool new to me holy mountain beer discovered on tap in washington last week, something not enough good american breweries play around with, when done right this style bangs, and this is really phenomenal. the roast level is cool, because it compliments the candy sugar, and its not so bold as to leave no room for notes of plum and black fig, fruit leather and molasses, but its not all that sweet either, fermented drier than a lot of these with a yeast that brings spiciness and winter warmth to it, a fireside december beer perhaps in its ideal context, but neither too heavy nor too strong for late summer sipping. the nuance here as this warms insane, the yeast seems to have come from belgium, its trappist good, and seemingly equally well used, and this has a bottle conditioned feel to me, even though its a draft pour, nice. licorice and unbrewed coffee, unbrewed coffee grinds and light smoke, wet soil and dried fruit, super impressive depth, and in an alcohol range that makes me want to have a few of them. cherry cordial, pipe tobacco, and clove late, nice carbonation, another please! i wish more american belgian takes were this good...
