Imperial Stout with Vanilla and Hazelnuts Aged in Bourbon Barrels
This variant of Midnight Still incorporates Imperial Stout that was rested in freshly emptied Kentucky Bourbon barrels for 12 to 24 months. The beer was then infused with massive amounts of hazelnut and Madagascar vanilla.

This one pours a very dark black color, with a small head, and a little bit of lacing.
This one smells like roasted, almost smoked hazelnuts, roasted malt, vanilla creaminess, bourbon, and dark chocolate.
This is fantastic – the Midnight Still base is obviously a superior stout here, and takes well to barrel aging, with lots of char, maybe even a bit of coconut, some caramel, bourbon, and oaky spice. The hazelnut and vanilla are done without being overbearing – they don’t add too much sweetness, they add a bittersweet, nutty, and earthy sweetness here.
This is medium bodied, rich and creamy, with a bit of booziness, but nothing overwhelming.
This is a high class, almost elegant take on a pastry stout. It’s still a great barrel aged stout at heart, with thoughtful dessert-y additions.
