Outward Sign of Invward Grace is a blend of puncheons and wine barrels that held spelt and oat-based beer fermented with our house mixed cultures. Once blended, it was racked into a second set of oak barrels, where it briefly rested on a Grenache pomace and went through a second fermentation with Brett.

Poured at fridge temp into a Cantillon balloon glass. Pours a nice orange/yellow with white fluffy head. The nose is full of white wine, orange, mango, sour grapes, vanilla, and a touch of barnyard funk.
The taste is sour candy, funk, pineapple, vanilla, and grenache. Some leather and an earthy note come through with a few minutes of settling. The mouthfeel is medium bodied, fairly dry, and comes with a nice aftertaste of sour grapes. Just a lovely beer.

Appearance: Pours a slightly hazy golden color with a two finger head that fades to a film; splotchy lacing
Smell: Grenache tones blend with the spelt in the malt bill; a hint of the farmhouse Brett wafts
Taste: Leathery Brett forward with the Grenache tones emerging to dominate; the spelt is overwhelmed, up front, but hints of it emerge in the rear
Mouthfeel: Medium body with low to moderate carbonation
Overall: Holy Mountain once again pushes the creativity forward; the blend of the Brett and the Grenache creates a unique flavor profile
