The Holy Mountain crew call this phenomenal-for-the-style Lager “our tribute to the svetlý výcepní [Pale draught] beers of Czechia.” To craft it, the Seattle crew started with a soft base of extra pale Bohemian pilsner malt before kettle hopping it exclusively with Saaz. Then they fermented it cold with a delicate lager yeast and conditioned the brew for six weeks.

Pours three fingers of head into my Willi. Retention is average and the head fizzes away within a minute or two, settling into a nice sliver. Lacing is pretty nice. Body is golden yellow, crystal clear, with a modest amount of bubbles coming up. Looks good.
Nose has a soft doughy nature, backed by a small mineral character and some pleasant noble hops that quickly become prominent. A lovely aroma.
Flavor is similar, boy is this soft. You get an elegant maltiness, with an underlying grassy noble hop presence; well balanced and very delicate. Simple, but boy does it hit the spot.
Carbonation is medium, but it also has a very soft feel to it that compliments things well. Body is light, a little watery at times, but it is only 4%. Bitterness is medium-low. Just slightly dry, very clean, and refreshing. Great mouthfeel.
Drinkability is wonderful.
Overall a really solid lager. Gets a little watery at times, but overall it’s elegant and well balanced.
