Introducing our first fresh hop beer of the season – As Within So Without – our Extra Pale Ale brewed with freshly picked Centennial hops from our friends at Roy Farms. This iteration of As Within was brewed with Cashmere and fresh Centennial. First we used our hand-selected Cashmere in the kettle and dry-hop. Then we stopped by Roy Farms in Yakima to gather some of the season’s first hops, which were infused through recirculation in our specialized infusion tank. The result is a beer that balances the piney, citrus notes of the fresh Centennial hops with a refreshing backbone of lemon-lime from our carefully chosen Cashmere.

Poured into a Seattle Beer Week pint glass. Pours a lightly hazy, light to medium golden amber with a two finger white head with great retention and solid lacing. Aroma of pale malt, citrus and piney hops, lemon, orange and mild pine. Flavor is pale malt, citrus hops, lemon, mixed stone fruit, light grapefruit and a hint of pine and dankness. Medium bodied with nice moderate creaminess. A fine fresh hop ale with base cashmere and fresh hop centennial, giving the expected great citrus character. Mostly lemon and grapefruit, but a little orange and hits of stone fruit. Good citrus herbal hop flavor. My favorite of the (still young) fresh hop season so far.
