Do Platypus have beaks?
We met our new pals at Beak for the first time during the hop harvest out in the Pacific Northwest. Shortly after, we tried their wares at a tap takeover and were chuffed to pieces with how good their beers are, especially for such a young brewery! Fast forward a few months and we’ve welcomed the gang over to brew a big juicy DIPA, blending aspects of both our beers. Bill is the result.
Don’t let the pale appearance fool you. This beer was built on a base of Heidelberg pilsner with heaps of oats, wheat, wheat malt and rye. Hop-wise we squeezed in as much Citra as our whirlpool could handle before adding Citra Incognito, and a day 1 dry hop of, you guessed it, more Citra! Post fermentation, this already Citra-saturated beer was met with its New Zealand cousins Riwaka and Wai-iti, plus Citra Cryo. Creamy and rich, with a full body that supports the dominating mango and passionfruit aroma, and soft notes of sauvignon blanc, gooseberry, orange and strawberry.

Copenhagen 20/4 2025. 44 cl can from A Good Case web-shop. Fine hand drawn can design with a yellow background with a platypus (probably named "Bill") peeking in through a green circle.
Pours opaque hazy, golden yellow with a small white head. Stable. Settles as thin, almost transparent layer of foam stretching to cover the surface of the beer. Clinging to the sides of the glass. Moderate lacing.
Aroma is fairly intense with a sweet odor of overripe Stone fruits mingling with a prominent, sharp citric scent. Mango and Peach. Bruised and soft. Grapefruit and Lemon.
Light carbonation. Medium thick, oily, slightly viscous soft, smooth, almost flat texture.
Flavor is fairly intense with a strong sweetness followed by a medium strong citric bitterness. Aftertaste is bitter with a nice sweet and fruity undertone. Lingers for a while. Finish is rather dry.
A perfectly nice Monotreme.

Pours a hazy light orange with soft, soapy head.
Smell is juicy and a bit sweet with notes of mango, gooseberries, orange juice, ineapple and melon. Quite in your face.
Taste is juicy, sweet and intense. Notes of mango, orange juice and pineapple. Extremely hoppy but with no burn. Superb balance with a soft bitterness.
Mouthfeel is medium, soft, pillowy and well carbonated.
Overall, a great DIPA, showing Stigberget's level when they get it.
