Sherry barrel aged PIME OO imperial stout

APPEARANCE: Black pour yields a 1+ finger, medium looking, slightly fizzy tan head with great retention. Black body with lots of carbonation evident. Head recedes to a full, creamy cap. A swirly, splotchy wisp remains leaving touches of lacing down the glass. Head is a little fizzier at the get-go compared to the original, but the rest of the experience is solid.

SMELL: Lots of sherry, red wine aromas, oak, vanilla, milk chocolate, coffee notes, a decent roasted character and some booze on the nose. Bold and enticing for sure.

TASTE: Lots of sherry, red wine flavors, oak, wood, vanilla and alcohol up front. Strong, boozy and very flavorful. Some more booze, sherry and some dark fruits at the swallow, moving into a bold and lingering finish of sherry, oak, vanilla cream, milk chocolate, some bitter pure chocolate and coffee character, roasted malts and plenty of alcohol. Really flavorful and flavors persist long after the swallow. Bold and outspoken.

PALATE: Fuller body with slightly lower levels of carbonation. Creamy and smooth on the palate, enough weight, goes down silky with a bit of a burn at the swallow and finishes sticky on the palate. Some heat lingers. Same as the original.

OVERALL: This is excellent. This is just as good as the original but with a boozy sherry barrel all over it. This is a big, bruiser of an imperial stout with all the right stuff in all the right places. The flavor and aroma are spot on, while the look and feel add some solid support. Pohjala has had a few recent misses in their BA program but this one is certainly a top notch effort. Well worth checking out multiple times, even at the rather steep price point. Highly recommended.

A-Pours jet black in color with a one-finger foamy dark tan head that eventually reduces to a ring around the edge

S- bold barrel notes come across as black cherry, plumbs, prunes, oak & blueberry. Beyond the barrel, aromas of dark chocolate, toffee, black licorice, char, molasses, brown sugar, stewed apples and Christmas cake all begin to open. The complexity seems to continue, the longer it sits in the glass

T- initially sweet on the tongue, followed by a big hit of sherry barrel that produces flavors of dark cherries, plums, dates & prunes. Mid-palate brings out notes of dark chocolate, molasses, caramel and all things sweet. The finish brings out a hint of oak, along with more dark fruit notes, particularly black cherry, from the sherry. Lingers sweet, fruity and chocolaty

M- medium-heavy body with moderate carbonation leads to a thick and creamy mouthfeel that continues into a slightly warming finish

O- sweet, complex & fruity, this one is a slow sipper, and an outstanding one at that

L: Very dark brown color, quarter finger light brown head, nice thin lacing, no visible carbonation.

S: Sweet, oak, chocolate, liquer, alcohol. Smells wonderful.

T: Very sweet, oak, liquer, alcohol. Delicious and big!

F: Full bodied, full flavored.

O: Very alcoholic but delicious nonetheless.

Pohjala Cellar Series Pime Oo PX Imperial Stout aged in Sherry barrels. I ran across this bottle in Chicago and I couldn't pass it up...have heard awesome things about this brewery's barrel program out of Estonia and this delivers. The base stout is key to this and brings so much complexity between sweet molasses-like flavors, dark fruits, roasted/coffee qualities, black licorice, and even some chocolate and caramel. The sherry barrel provides some slight charred oak, bright fruitiness, and vanilla to the equation. Barrel is well-integrated. Sure, it's a bit warming going down, but overall this is drinkable and smooth for the 13.9% abv. Simple proof that that the hype is no lie with these guys.

This one pours a very dark black color, with a small foamy head, and not much lacing.

This has a fairly decadent aroma to it- with sherry, chocolate covered plums, black cherry, molasses, caramel, and brown sugar. It's a unique aroma for a stout.

This is very sweet, but in a wonderful way. The sherry barrel melds well the base beer- as it has big dark fruit tones. It's kind of like chocolate covered plums, some raisin, and black cherry skin. The chocolate is creamy and silky here, with some vanilla, too.

This is medium bodied, silky and super creamy, with a lower level of carbonation.

This is still the best brewery I've tried from Estonia. It's also the only brewery I've had from Estonia, but the sentiment still stands.

Beautifully black. Head quickly dissipated. Complex aroma, from chocolate, coffee, booze, grape, smoke, and vanilla. One of the most complex, layered imperial stouts I've had in a long time. Glad to have gotten a bottle of this!

Appearance: This beer pours black with highlights of dark brown around the edges. It appears viscous and opaque. A flash of dark brown, loosely packed bubbles form as I pour the beer aggressively, but quickly disappear. Zero head whatsoever and no visible carbonation. I’ve got a spec of red wax in my glass that fell into the bottle when pulling off the cap.

Smell: This beer smells sugary sweet. Like a booze soaked fruit cake. Dark fruits including raisin, figs, dates, espresso coffee, dark chocolate, milk chocolate, panettone, dark bread, dark bread dough, meaty, hints of smoke and some roasty bitterness on the finish. Baked apple and cinnamon as it really warms up. Noticeable alcohol presence as the beer warms up, and upon taking a deep whiff.

Taste: Up front on the tip of the tongue this beer tastes like a tawny port wine. I don’t know in what type of the wood the sherry ages, but this beer has a definitive woody character. Sweet dark fruit including raisins. Burnt sugar sweetness and bitterness. Caramel and toffee. Again, suggestions of meat and smoke. This beer evokes feelings of Glögg at Christmas time with raisins and almonds soaking in the bottom.

Mouthfeel: Thick, slick mouthfeel with no carbonation. There’s also a phenomenon that I’ll describe as “lip feel.” It’s happens to me usually with big, sweet barrel aged stouts and big Belgian Dark Strong Ales. It’s the sticky sweetness on the lips. It’ll still be there in the morning after closing the night with a beer like this.

Overall: I’m really enjoying this beer. It’s very sweet, but that perfectly hits the spot on a cold winter day, with snow on the ground, while watching the New York Football Giants. For 13.9% I find it very drinkable. It’s never too boozy nor too sweet. If the idea of a wood forward, thick and sweet stout is unappealing then you may not like this beer.

Pours into a snifter jet black with not light getting thru,a thinner but well sustained deep beige head atop.Dark roast coffee,dark chocolate ,and a smidge of sherry barrel in the nose.Deeply roasted coffee really hits home on the palate with dark chocolate also a major element,the sherry barrel lends into a nice finish,man this is decadent.Chocolate...coffee and mild sherry make for a fantastic flavor profile,a damn joy to drink.

A thick, slightly sweet imperial stout. Well-balanced with nice chocolatey bitterness. I liked the sherry notes from the barrel - not overdone. Full bodied and not cloying. ABV hidden well.

Poured from fridge temp into a teku. Pours pitch black with very little light brown head. Nose is chocolate covered cherries, lactose, a bit of smoke, and a bit of cinnamon spice. Taste is really nice and complex. Nice roasted malts, brown sugar, sherry, chocolate, milk, a bit of coffee grounds, and a touch of toffee. There is a sweetness from the sherry that is really nice - not cloying. Mouthfeel is thick and creamy, and the aftertaste is chocolate. Overall, a great barrel-aged stout.

Really dark brown color with brownish head. Aroma is slightly smoky and sweet, syrupy with some brandy notes on the finish. Taste starts sweet and syrupy with umami, booze soaked cherries and some bitter espresso on the finish. Heavy, sticky body with low carbonation. Really tasty with subtle but pleasant barrel character.

Enjoyed this beer at Cigar City's Hunahpu's Day 2016 in Tampa, FL. This is one of the surprise breweries that I've never hear of before but I had two of their beers that really impressed. This is a really solid stout with huge notes from the sherry barrels. Really tasty!
