a neat blend of their ipa and a foudre fermented saison, hands down the most refined beer in here when we visited and easily my favorite of the lot. bright golden in color with a little haze and some patchy white lace, aroma and flavor both of southern hemisphere dry hops, kiwi fruit, melon, and lime, with a berliner type mild tartness and wheaty complexion, a little starchy at its core but rather delicate. some bitterness from the ipa element, but i suspect even on its own that beer is not all that bitter, its just enough to round this out and help it finish. i cant imagine this is a 50/50 blend, as the wild element is pretty minimal, not young or juvenile, but just low in the proportion, outmatched by the ipa portion of beer, but what is there of it is awesome, and gives me a lot of hope for the future beer these guys make. white wine and oak notes in the middle, dry and hoppy at the end, just a little citric tartness, very drinkable and pleasant, good complexity and freshness, overall really good. definitely the highlight right now here, hopefully they keep making it!
