Fallow is a blend of farm house ales from within the brewery each of which focuses on a different grain and fermentation character. Like a field properly farmed and left alone for a season, the result is an enhanced yield; in this case of flavor. The character of the two beers mature and increase complexity. This first batch has a bright acidity at the front which gives way to a clean and dry finish with accents of buckwheat.

Straw yellow and clear in color. A 1 finger white, fizzy head dissipates into a very faint ring around the glass.
Lemon, lemon peel, grassy and funky both in aroma and taste. The flavor delivers a touch of graininess (Rye, Buckwheat?) and wheat. There is a slight spice in the slightly puckering finish.
Light in body, light in carbonation. An easy, pleasurable drink with a lingering peppery, woody taste.

Pours clear gold in color with minimal head. Taste is sour mix and lemon. Light bodied, sour, with moderate carbonation. Nice and easy drinking sour.
