Senescence is the collective process that leads to the death of a plant, such as a leaf. Through this beer we seek to capture the bittersweet beauty and color of the summer’s end and bridge the gap until nature’s wheel turns back to spring. Late season foraged birch leaves and Connecticut chardonnay grapes offer an appropriately tanic quality with hints of apple and pine nuts alongside complex acidity produced by fermentation with native wild yeasts.

Pours with no head, almost looks still, semi clear golden straw to chardonnay color
Nose white grape skin, white wine, must, tart souring funk but not overly sour, little grassy, lemony, a bit of apple and orchard fruit,
Taste starts with a bit of tartness, mild souring bacteria or wild yeast but quite mild, plenty of tart fruit, lemon, apple, a bit straw lemongrass, more white grape must and white wine, fair acidity, mild flemmy finish,
Mouth is med bod, low carb, fair acidity
Overall not bad, even for the age it had some nice sour notes and white grape must, fairly enjoyable.

750 mL bottle. Hazy pale yellow body. Smells of acetone and earthy, spicy hops, like Saaz. Tastes super sour right up front. Acetone and lemon. Masks everything else. It's a little earthy in the back end. Light body. Difficult to drink.

Had on tap at Prime 16. Super duper tartness across the board. Lemon like sweetness. Getting a bit of the white wine grape flesh and juice. Tartness dominates here, almost to a fault, but it's still quite delicious if you like sours. Good beer for the spring.
