A blend of one, two, and three year old spontaneously fermented beers.
Each season we allow wort to chill overnight outside in our farms retired milk chiller which in turn inoculates the beer with wild yeast and bacteria. Once transferred into oak barrels these beers are allowed to ferment and age for several years before blending and bottle conditioning with local honey.

Orangey yellow body with a thin white cap. Smell is funky and vinous with oak, honey and flowers supporting. Taste is an acidic version of the nose with a bevy of tropical fruit added. Feel is stupidly tart and decently acidic so have the tums ready! Otherwise bright, medium bodied and has a whisper of funk compared to what was expected.
