Variant 6, the final release in our series of Brett Dark Strong Ales from the original batch was fermented in stainless steel and allowed to rest in a bourbon barrel for two years before an addition of vanilla beans was added. Bottled and allowed to rest for over one year before release, this beer is quite dry, has more suggestion than actual presence of acidity and a deep chocolate and cherry approach with a marshmallow finish.
